TODAYS HACK
It's is SQUAHS season (my favorite season)
Don't be afraid, its just a SQUASH!!! They are easier to cook and enjoy then you might think:
How to cook an acorn squash like a pro!
(side note: these are my favorite!!!!)
Preheat oven to 375 degrees
Grease a baking sheet and add 1/4 cup water on top (this might sound weird but trust me!)
Cut acorn squash long ways (from the smallest side to the largest side that has a stem)
Remove seeds and place cut face down onto the baking sheet
cook for 20-40 minutes (you can tell that its done by squeezing it with an oven mitt, it should be soft!)
Once done you can top with a number of toppings but i LOVE mine with just a sprinkle of salt
OTHER TOPPINGS:
cinnamon, butter and brown sugar
salt pepper and coconut oil
a scoop of greek yogurt and honey drizzled
